Word has document properties such as Title, Subject, and Author. These can be updated manually after generating an output using m2Doc. However, I'm wondering if there is a way to specify from medini?

That's unfortunately not possible at the moment. What's your concrete use case, is this relevant in your company processes?
Note that you can also modify the properties in Word already in the .docx template, so that it does not have to be repeated for every generated output.
